POZOLE
Ingredients:
1 1/2 to 2 pounds Pork shoulder2-3 cups Canned hominy, drained, rinsed.3-5 cloves of Garlic2 Tsp salt6 cups Water/beef stock
For garnish:
Radish, lettuce, ground chile piquin, limes, oregano
Directions:
Add pork, hominy, garlic, salt and stock/water to a large pot. Boil over med-high, then let simmer over low for 1 1/2 to 2 hours, or until the meat is very tender.
Remove from heat. Set aside pork from mixture and shred when cooled. Return to pot and allow mixture to simmer for 15 minutes.
