BANANAS FOSTER CREPES

Filling:
1/2 cup butter
3/4 cup brown sugar (packed)
1/2 tsp cinnamon + extra for garnishing
1/2 tsp nutmeg
1 cup low-fat milk
2 tsp rum (or imitation rum)
1/2 tsp cornstarch or arrowroot
8 bananas (cut lengthwise)
whipped cream/cool whip/ice cream (if desired)
Directions:
Melt butter in a large skillet, then add sugar and spices. Mix in milk, rum, and cornstarch in a separate bowl. Mix into skillet. Cook until slightly thickened. Add bananas and cook until just barely soft.
Assemble:
Add one half banana and serve sauce over top of crepe. Add any of the creams if desired. Roll/wrap bananas stuffing. Garnish with cinnamon.
