APPLE CREPES WITH CARAMEL SAUCE
Ingredients:
2 Tbs. butter (melted)
1/2 cup sugar
1/3 cup apple cider
7 Golden apples (peeled, diced)
1/2 tsp cinnamon
1/2 tsp nutmeg
3 cups sugar
1 cup water
2 cups heavy cream
Directions:
Beat eggs, water, and milk and butter. Beat in flour until smooth. Refridgerate.
To prepare the apple filling, combine the butter and sugar in a saute pan over medium heat. Add cider and apples. Add cinnamon and nutmeg. Cook until the sauce has thickened and the apples still hold their shape.
To make the caramel sauce, combine sugar and water in a saucepan over medium heat to make simple syrup. Stir until mixture turns golden while over high heat. Remove from heat, and beat in cream.
Add apple filling to dessert crepes and roll them. Drizzle caramel sauce and vanilla ice cream.
